We have updated to the new universal grading standards.  We currentlyhave Dark, Robust Flavor and Very Dark, Strong Flavor (formerly Extra Dark) grade available upon request.  Amber Color, Rich Flavor will be sent unless otherwise requested by the buyer.  Both are Grade A with the darker syrup having a stronger flavor which tends to be better if you plan to use it for cooking.  It is still good on pancakes as well.  It really is just a personal preference.  We can also send some of each, just let us know what you want!
