) is a sugar produced from the sap of cut flower buds of the coconut palm. Coconut sugar has been used as a traditional sweetener for thousands of years in the South and South-East Asian regions where the coconut palm is in abundant supply.
The Glycemic Index (GI) of coconut sugar was reported by the Philippine Coconut Authority to be 35 and by that measure is classified as a low glycemic index food. Coconut sugar provides 16 calories per teaspoon and contains relatively low content of essential nutrients except for potassium at about 25% of the Daily Value. For cooking purposes, it has a very low melt temperature and an extremely high burn temperature so it can be used baked products in place of sugar. In summary:

Coconut sugar is lower than table sugar on the Glycemic Index (GI), which ranks carbs on how they affect your blood sugar (glucose).
The major component of coconut sugar is sucrose (70-79%), followed by glucose (3-9%). Sucrose (table sugar) is made up of half fructose. That makes coconut sugar 38-48.5% fructose, which is about the same as table sugar.
